- 4 cups lettuce *see note below
- small red onion *cut into very small pieces
- 1 large Cucumber* sliced into thin half moons
- 1 cup cherry tomatoes *halved* see note below

- 3 medium carrots *sliced into thin half moons
- 3 tbsp chopped green onion
Dressing material
- cup extra virgin olive oil
- cup white wine vinegar *Red wine vinegar will also work
- juice of one large lemon
- 2 tablespoons Italian seasoning
- teaspoon salt
- spoon black pepper
- 2 tablespoons Dijon mustard
Optional Mix-ins and Toppings
- Nuts, seeds, fresh herbs, black olives, Parmesan cheese, sharp cheddar, blue cheese, feta crumbles, crunchy croutons, red cabbage, chopped spinach or chopped bell pepper.
Recipe Note:
Lettuce: Romaine, butter and iceberg lettuce are all good choices! Choose your favorite or mix and match.
Tomatoes: Roma or grape tomatoes will also work fine.
Instructions
- Cut lettuce into small, bite-sized pieces. Transfer to a colander or salad spinner, rinse and dry.
- Wash carrots, cucumbers, green onions and cherry tomatoes. Pat dry.
- Cut the carrot and cucumber into thin half-and-half pieces and chop the green onions.
- Cut red onion into very small pieces and half a tomato.
- Combine lettuce, vegetables and tomatoes in a large bowl.
- Measure dressing ingredients (olive oil, vinegar, lemon juice, Italian seasoning, salt, pepper and Dijon mustard) into a small bowl or glass jar and whisk well.
- Drizzle dressing and toss over salad (or serve dressing on the side).
- Plate and enjoy!
